The Boozy Betty Recipe - Our Platinum Jubilee Pudding Entry (it didn't win - but it's still amazing)
Boozy Betty
Sauce ingredients
100 g Golden Syrup
100 g Marmalade
50 g Sultanas
15 ml Whisky (or juice of 1 orange)
Sponge ingredients
100 g Butter
100 g Light Brown Sugar
2 Eggs (beaten)
100 g Self Raising Flour
1 tsp Baking Powder
1 tsp Ground Cinnamon
Grated Zest of 1 Orange
You'll need a heatproof bowl or pudding basin that holds between 1.1 and 1.5 litres of water. Liberally grease that bowl with butter. Set aside.
In a separate small bowl, add the golden syrup, marmalade, whisky and sultanas. Warm in the microwave for 30 seconds on high, then stir the mixture to easily combine.
Scrape the sauce into the pre-prepared buttered bowl (Lick the spoon - it's delicious!) and pop the bowl in the fridge so the sauce can firm up a bit. This makes it easier to dollop the pudding batter on top later on.
In a large mixing bowl add the butter. If it's straight from the fridge then warm in the microwave until soft - around 30 seconds will do.
Add the light brown sugar and mix until well combined, smooth and light in colour.
Add the beaten egg a bit at a time whilst stirring and carry on until smooth.
Add the grated orange zest and stir through.
Add the flour, cinnamon and baking powder and mix with a spoon until well combined and smooth.
Dollop the batter on top of the sauce and evenly spread out with a spatula or the back of a spoon.
Cover the bowl with microwave proof cling film and pierce several times with a skewer.
Put the pudding into the microwave and cook on high for 4-5 mins (For a 900W microwave).
Once done, check if it's cooked properly by removing the clingfilm and inserting a skewer into the centre of the pudding. It should come out clean. If not then pop it in the microwave to cook for a further 30 seconds.
Leave to rest for 4 mins.
Place an upside down plate onto the bowl and carefully flip the pudding right side up. Gravity will pull the pudding down to the plate on its own and the sauce will evenly coat the entire pudding. Remove the bowl and
serve immediately with custard, ice cream or cream.
